"You can be fit and enjoy wonderful food," says Art Smith, who proved it when he dropped 120 lbs., while still keeping fans like Oprah happy with his famous fried chicken, and occasionally indulging himself. The Top Chef Masters star was one of three-dozen chefs whom People senior editor Allison Adato spoke with for her book, Smart Chefs Stay Slim: Lessons in Eating and Living from America's Best Chefs, just out in paperback. Each one of them has managed to either maintain a healthy weight - or lose a lot - despite working around rich and delicious food everyday. If you're...

Last week: Debbie packed her knives and I forgot to watch. Oops.
Quickfire Challenge
The chefs must cook seafood without any heat or fire. Everyone immediately realizes Takashi has a huge advantage. Brian Boitano is the guest judge... apparently he's an Olympic figure skater? Brian really enjoyed the dishes made by Mark and Chris, but he chooses Takashi. No one is surprised really. He wins immunity.
Elimination Challenge
The chefs will be working in teams to make a three-course meal on a Teppanyaki grill (hibachi-style). They get 30 minutes per three-man team, which is tight. Not to mention, they will be cooking while the judges watch their every move -- including former Master Chef contestants Rick Moonen, Susan Feniger, Jonathan Waxman and some other chef whose name I forget (sorry!).
It's actually really fun to watch the chefs cook hibachi-style. Maybe it's because I love Japanese food, but it's probably one...

This week’s nautical-themed episode of Top Chef All-Stars is titled “We’re Gonna Need A Bigger Boat”. Guest Judge? This Guy: Some suggestions for future episodes based on topical movie quotes: - Are You Cookin’ To Me? - Show Me The Foody! - I Know It Was You, Colicchio, You Broke My Beef Heart - Life Is Like A Box Of Chocolates, Also Scallops - It Doesn’t Take Much To See That The Problems Of Three Little People Don’t Amount To A Hill Of Delicious Beans In This Crazy World - I am Spartacus! Seriously, though, who still titles things after Jaws quotes? Oh right, this post. Fine. But I have a great explanation for that – I’m a generally useless person. Enough critical film analysis, it’s time to Cap some Re: Jamie continues to remain on the show, even though she’s only made one...

Gail Simmons hosted the Food and Wine All-Star Weekend Nov. 5 through 7 in Las Vegas. The event was put on by Food and Wine magazine, the Bellagio and MGM Grand Resorts.
The weekend was filled with several fun events that, of course, involved food and wine. The weekend's kick-off on Friday, Nov. 5 started with a red carpet at the Vdara hotel where Simmons and "Top Chef" alumni, including Carla Hall, Hosea Rosenberg, Fabio Viviani, Jennifer Carroll and Stephen Hopcraft, and several top chefs in Vegas, including Rick Moonen, Julian Serrano, Hubert Keller and Shawn McClain. After posing for pictures, Simmons went inside Bar Vdara to host the kick-off party with passed appetizers, a carving station that served lamb sandwiched in Naan, and cocktails. An after-party at Deuces Lounge in the Aria hotel, also within City Center, followed.
Simmons told me how "Top Chef: Just Desserts" came about at the red carpet.

This is a Recap of Top Chef D.C. (Season 7), Episode 11, entitled “Making Concessions”, originally airing August 25, 2010. Prepare to concede that this Quickfire theme was painful. We’re down to the Stupendous Six, and with the pressure mounting, Ed walks around in a dress, the whimsical clothing equivalent of calling your mid-chemotherapy wife to score “staying on the show” points: This week’s guest judge is Rick Moonen, and as we know from every sound byte ever uttered on Top Chef Masters, this em effer loves his fish: The Quickfire is obviously something fish-related, right? That’s cool, they haven’t really had a seafood challenge in a while, and they’ve got one of the premiere seafood chefs in the country there to judge, so…wait, why is Padma saying a bunch of clichés? They’re not going to have to cook clichés, are they? Oh good, that’s...

Now that Alex is gone, somebody’s got to fill the crazy quotient in the Top Chef house, and who knew there was such a plethora of insanity this year? Shrines devoted to four-star chefs, Anthony Robbins books, cross dressing—I think we’ve hit the turning point, my friends.
Meanwhile, the cheftestants have apparently hit their boiling points because last night tempers were flaring. Stress ran high, baseball players ran tall, and gimmicks abounded.
Things got started when Padma and guest judge/Top Chef Masters alum Rick Moonen, who bears an uncanny resemblance to another chef Rick, explained that...

I really enjoyed this season of Top Chef Masters, which came to a close last night with a heart-stopping final showdown between three of the strongest chefs in the competition. It was only fitting that the season finale ("Top Chef Master") would ask each of these master chefs to reflect back on their lives and their careers and pull together a final three-course meal for the critics that reflected where they had been and where they were going. Happy childhoods, struggles, and painful memories--as well as creative awakening--were all demonstrated on the plate as Marcus Samuelsson, Susur Lee, and Rick Moonen faced off for the title of Top Chef Master and a substantial donation to the charity they were playing for. So how did they do? And who walked out of the Top Chef Masters kitchen as the ultimate winner? Let's discuss. At this point in the competition, I'm glad...

"Top Chef Masters" wrapped up its second season and crowned its second king.
Although the finale seemed to lack the cutthroat competitiveness of the usual "Top Chef" series, there was still plenty of suspense considering each chef delivered exceptional menus with many highs.
It was Marcus Samuelsson that bested seafood king Rick Moonen and fan/chef favorite Susur Lee at their own games, bringing African food into the fine dining world.
The competition was close, however, and Samuelsson won by a mere half point -- 17.5 over Lee and Moonen's 17 points each.
The three chefs were tasked with bringing together three courses that represented their journeys as chefs. First course would be their first significant food memory, second course was inspired by a meal that made them decide to become chefs and the final course would describe themselves as chefs.

Let us start by admitting that we’re still disappointed that French culinary genius Hubert Keller was not a contestant this season on Top Chef Masters. Add to that how bummed we were that local culinary queen and founding Food Network maven Susan Feniger (aka one of the Two Hot Tamales) got the boot a couple of weeks ago, and we’re a little torn about the way this season is shaking out.
Needless to say, we’re having a hard time deciding who we want to take home the title of Top Chef Master. From what we can tell, Susur Lee is one of those once in a lifetime creative visionaries, but his particular brand of cooking doesn’t really whet our appetites. Marcus Samuelsson seems like a nice enough guy and a talented chef, but he doesn’t seem to overwhelm the judges with innovative cooking. Then there’s Rick Moonen,...

Ah, pub food. For all of its humble origins, British pub food is exactly what I crave on a long, cold night, conjuring up an image of a roaring fireplace and a nice pint of lager. It's earthy, homey, stick-to-your ribs sort of food and it's just as often terrible when it's made without care or love. But in the right hands and in the right kitchen, it's just the thing to banish the mid-winter blues. On this week's episode of Top Chef Masters ("Pub Food"), six master chefs from Season One--Jonathan Waxman, Ludo Lefebvre, Mark Peel, Rick Moonen, Wylie Dufresne, and Graham Elliot Bowles--returned with a second shot at glory as they reunited in the Top Chef kitchen to compete for charity, a spot in the next round of competition, and a chance to redeem themselves. But in order to do so they'd not only have to...

From soul food to pub food, tonight's episode of Top Chef Masters will feature six not so new chefs who'll try to convince "high-brow" clients - in other words, the normal people you see on Top Chef Masters - that good food doesn't necessarily have to be made of unpronounceable ingredients.
Top Chef Masters' Season 2 Goes into Full Gear

Competing will be Graham Elliot Bowles, Jonathan Waxman, Ludo Lefebvre, Mark Peel, Rick Moonen and Wylie Dufresne, who, as you probably notice, have all done Top Chef Masters in its inaugural season. Is it redemption for these chefs? Or rejection anew?...

"Top Chef Masters" returns with more chefs who dare to put their reputations on the reality TV line.
We're definitely excited to see some of the new lineup, in particular Susan Feniger, a Los Angeles-based chef who is personable and hilarious, but is also known on TV for being one of the "Two Hot Tamales" with business partner Mary Sue Milliken (Ciudad, Border Grill).
But we're also psyched to see a lot of returning chefs like Ludo Lefebvre get a second chance. Can he prove himself and go further than he did last time or will the friction with Rick Moonen get the better of him.
Seeing these masters struggle just as much as the usual "Top Chef" competitors shows just how difficult these challenges are.
Check out this introduction to the chefs:
Be sure to also check out the lineup of special guests that will be testing the chef'testants.

One of our favorite reality shows, Top Chef Masters, returns for a second season tomorrow night, April 7 at 10:00 Pm.
In a very unusual twist for a reality show, Top Chef is inviting back past players for another attempt at the title. Graham Elliot Bowles, Wylie Dufresne, Ludo Lefebvre, Rick Moonen, Mark Peel, and Jonathan Waxman were all eliminated in the first round of Season 1, but they will return for a second shot at taking home the prize for their charity.
Also returning is host, Kelly Choi, and judges Gael Greene, James Oseland, and Jay Rayner. Joining them will be Gail Simmons who sits at judges table in the original Top Chef series as well.
From this sneak peak video, it looks like egos flare, knives fly, and a good time will be had by all viewers. The new cast is made up of a wide array of 22 culinary icons...

"Top Chef Masters 2" really turns up the heat with a slew of fun celebrity guests as well as returning chef'testants seeking redemption.
Among the guests will be the cast of "Modern Family" (perhaps a family style meal challenge?), "The Simpsons" creator Matt Groening (yellow food?), Hank Azaria who voices Moe and others on "The Simpsons," "Lie to Me" actor Mekhi Phifer, Olympic swimmer Jason Lezak and a trio of the "Real Housewives of Orange County," Lynne Curtin, Alexis Bellino and Tamra Barney, reports EW.
The site also lists Andrew Zimmerman as a guest, but since Wikipedia says Zimmerman is a professor of German history at George Washington University, we're going to guess that they meant Andrew Zimmern, host of Travel Channel's "Bizarre Foods." German food, while exotic to some and rich in history, probably isn't as challenging as what Zimmern will bring to the table. [Update: In a press release sent out Wednesday, Bravo confirmed Zimmern's participation.]

Less than two months before Top Chef Masters season 2 kicks off, Entertainment Weekly has revealed the list of the top-caliber chefs that will be competing for the title of, well, Top Chef Masters. If there was much bickering and not-so-professional attitude on the regular Top Chef last season (yes, this guy named Mike Isabella, among others), again prepare to be dazzled by top-quality dishes and less animosity between these world-renowned chef-testants.
Among the 22 competitors are six returning chefs from Top Chef Masters' inaugural season, including Graham Elliot Bowles, Wylie Dufresne, Ludo Lefebvre, Rick Moonen, Mark Peel, and Jonathan Waxman. Among the more notable names in the lineup, meanwhile, are Chicago chef Tony Mantuano, New York's David Burke, and Los Angeles' Susan Feniger.

(S06E09) The thing that sets Top Chef apart from similar shows such as Project Runway or Hell's Kitchen, is the level of professionalism on display. While both of those shows have strong contestants, on the whole, the pool seems more amateurish than those on Top Chef. This was clearly evident in this week's episode with the Quickfire Challenge.
The challenge, in which the contestants had to go in blind and complete a dish in ten-minute segments was amazing. I was thoroughly impressed with not only the fact that they could do this in the first place, but with how cool and calm everyone stayed. There wasn't a single contestant who didn't seem completely professional-- a fact that was evident when you saw how impressed guest judge Rick Moonen was with everyone.

I was thoroughly impressed with not only the fact that they could do this in the first place, but with how cool and calm everyone stayed. There wasn't a single contestant who didn't seem completely professional-- a fact that was evident when you saw how impressed guest judge Rick Moonen was with everyone.

There are only eight chef-testants left -- which can only mean one thing: Restaurant Wars! But before the epic showdown began, the chefs were split into teams for a Quickfire Challenge that rendered them blind and mute. Quickfire: With guest judge Rick Moonen, a champion of sustainable cooking and seafood, at the helm, the chefs drew knives and split into two teams led by Jennifer C. and Michael Voltaggio. Jen selected Kevin; Mike Isabella; and Laurine, while Michael V. enlisted his brother; Eli and Robin, who was, shocker, picked last. The teams had 40 minutes to prepare a dish relay-style, with each chef getting 10 minutes to cook. While they weren't working, they wore a blindfold. Also, there was no talking allowed -- sort of like a culinary game of Telephone. Blind Items: Jen started by prepping a seafood stock and a pot of olive oil that she hoped to use to poach black cod.

After the famed Top Chef restaurant war, it was Laurine who got the boot on the last night's episode of the Bravo cooking show. The 38-year-old San Francisco native actually started pretty well in the episode, as part of the winning team in the quickfire challenge, along with Jennifer, Mike, and Kevin (what a team right?). but she struggled with the elimination challenge, when she was chosen as front of house for team Mission.
For the quickfire, the chefs were divided to two teams for a tag-team cook-off, with Rick Moonen as guest judge. In the knives-drawing, Jennifer and Michael drew the only one with messages, first choice and second choice.

Tonight on Top Chef, it's time for Restaurant Wars, but since we're in Vegas, it's Restaurant Wars Sin City style. For this season, the eight remaining chefs take over Top Chef Masters alum Rick Moonen's restaurant to focus on the food, service, and front of house. Of course, Moonen will there to oversee the proceedings and act as guest judge.
On last week's Top Chef, it was all about pork and pinot, as the chefs were tasked to create a dish that will work well with a selected type of Pinot using the cut of pork that they picked (of course everyone was after the belly). The winner of the challenge was Kevin (and not a lot of people, including him, were surprised), with his pork leg pate with mushroom salad and pickled cherries, paired with a 2006 Sokol Blosser Dundee Hills Pinot Noir.

All eyes might be on the Primetime Emmy Award nominations that were released in the wee hours of the morning today (including one for Top Chef) but that doesn't mean I've forgotten about last night's episode of Top Chef Masters ("Miniaturize Me"). On this week's installment, the four newest master chefs--Michael Chiarello, Lachlan Mackinnon-Patterson, Nils Noren, and Rick Moonen--faced off in one of the toughest challenges displayed on the culinary series to date: preparing a three course meal for one hundred foodie guests at a cocktail party. But before that Herculean task, there was the Quickfire Challenge, which this week offered a flashback to Season One of Top Chef and featured guest judges Jeff Lewis, Jenni Pulos, and Ryan Brown of Bravo's Flipping Out. But no Zoila? What's up with that? So how did this week's batch of master chefs perform under pressure in the kitchen? Let's discuss.

The cast is almost complete for the champions round of Bravo cooking show Top Chef Masters. With four finalists waiting, another one is set to be added to the cast with tonight's all-male contest, featuring Napa Valley Bottega owner Michael Chiarello, Boulder's Lachlan Mackinnon Patterson, New York's French Culinary Institute's Nils Noren, and seafood king Rick Moonen.
The quickfire challenge for the fifth episode is reminiscent of Top Chef season 1, with the chef-testants making a gourmet version of a traditional junk food dish. Chiarello takes on on fish sticks, Patterson, the hot dog, Moonen, the corn dog, and Noren, fried shrimp, in what promises to be an exciting challenge especially given the newfound popularity of gourmet childhood favorites.
