Just as the Avatars have a talk with Leo, about telling Piper who is he, and unfreeze time, Piper is putting together a potion. She puts down the bowl and grabs the glass bottle. The scene goes to Leo and then back to Piper where you see her putting down the same bowl and grabbing the same glass bottle.
After battling the three invisible demons, Piper's fringe hair switches from left side to right side between shots.
Phoebe hits an energy ball away from her with a metal rod, but energy balls typically destroy anything they touch, therefore it is unlikely for this method to work. The balls are composed of "energy", resembling electrical discharge, making them especially unlikely for them to be swatted away with a metal rod.
However, Phoebe's powers made this feat possible. In previous episodes we see her use her power specifically to halt demonic weapons (energy balls, fire balls) and send them back at the attacker by turning their emotions (rage, aggression, hatred) upon themselves. The metal bat was simply a conduit for her powers.

When Brody is holding a gun on Phoebe and threatening Leo, there is no reason for Piper not to freeze him and disarm him, but she does not. This goes against her entire history and is never explained.
