In Episode 3, the Apollo 7 crew is being interviewed at a beach house. This is an actual house in the midst of Cape Canaveral. It has been favored for years as a retreat for astronauts and their families. Today it is used as a NASA conference center.
In Episode 3, we see the Apollo 7 crew driving their cars at the launch pad with the launch vehicle on the pad behind them. For this scene, they went to Launch Complex 34, where Apollo 7 was launched. The site was cleaned up and the rocket and gantry were added in post production. The launch platform still remains to this day.
The real Gunter Wendt has a non-speaking, uncredited cameo appearance in this episode (1.3). At around the 28:00 minute mark, Wendt is sitting to the left of Schirra (Mark Harmon) when he and Deke are discussing the complexities of the spacecraft and the mission objectives.
The camera crew interviews Walt Cunningham, who is introduced as the pilot of the Lunar Excursion Module. While some might think that this means that he is in charge of flying the craft, this is not the case. A LEM pilot is much like a pilot in a harbor, who stands next to the ship's captain and advises him in navigating the channel. The LEM pilot is in charge of navigation and the monitoring of the status and systems. The one who actually flies the LEM is the LEM commander.
Before launch, John Young asks Wally Schirra "how do you think Navy will do this weekend?" Schirra replies, "Well enough to beat Air Force's ass!" Unfortunately for Schirra, the 1968 Air Force-Navy game was played on October 12 (day 2 of the Apollo 7 mission), and Air Force beat Navy 26-20.
