When Carol collapses, she does so standing in the doorway (possibly to a pantry) falling backward into this next room, meaning she'd be lying through the doorway. When her ghost walks off and the camera shows this was her ghost by showing her dead body, her body is now lying fully in this other room, perpendicular to the door (90 degrees turned from how she fell).
Death by choking doesn't always come with as swift and permanent a collapse as usually shown in TV and film - the body might still do a fair bit of thrashing before death. Though it is unlikely Carol would have been able to fully clear the doorway, or do so without leaving any marks in passing.

When Carol chokes to death she collapses in the Kitchen. She is there for hours as time jumps to the party, and no one, including the Ghosts discover her. Yet somehow Jay was able to make hors d'oeuvres and somehow not see the dead body.
