When Blanche serves Lillian the Eggs Dauphine, Lillian says she wanted scrambled eggs. Eggs Dauphine are a French egg recipe that is a dish similar to a deviled egg that is boiled, peeled, with the yolks (mixed with other ingredients) and placed inside of the egg white. This is then served with a bread crumb mixture and covered with a Bechamel sauce. Obviously, this is very different from scrambled eggs. It is very popular in the south today, served in Cajun restaurants.
