I remember You Bet Your Life, and it's a shame it didn't last longer than one season. I remember the co-host was Robbi Chong. Robbi's mother is of Black Canadian and Cherokee descent and her father is half-Chinese and half Scotch-Irish/French.
I know there's a current reboot now with Jay Leno, which I haven't seen but I can imagine it's "safe" if you know what I mean.
I think if there's a further reboot, say with edge, I would suggest Joel McHale to rescue the series to give it that Jeff Winger edge that You Bet Your Life is famous for.
